Fictional Food Nerds Series
“A Goofy Movie isn’t a nerd classic; A Goofy Movie is a Black nerd classic. A Goofy Movie is unequivocally the Blackest Disney movie of all time.” When I read the words of this article written by Black Nerd Problems a few years ago along with others cherishing ‘A Goofy Movie’, I immediately began to unpack and more full comprehend my own connection to this 1995 Disney Classic.
For my homage to one of the greats, in my Fictional Food Nerds Series, I recreated my version of Goofy and Maxie’s ‘Hi Dad Soup’. Mine was a Chicken Leg Butternut Squash Alphabet soup with sauteed broccolini, that quite frankly had the body and unctuous quality that could actually be called a stew.
Chicken Butternut Squash Hi Dad Soup
Ingredients:
- 5-6 seasoned chicken legs
- 1/2 cup each of onions, celery, carrot
- 2 boxes low sodium vegetable broth
- 2 cups medium diced butternut squash
- 1/2 tsp garlic
- 1/2 tsp smoked paprike
- 1/4 tsp turmeric
- a few sprigs of thyme
What I did:
- Brown 5-6 seasoned chicken legs in heavy pot with olive oil1/2 cup each of onions, celery, carrot
- Remove chicken, set aside2 cups medium diced butternut squash
- Add onions, celery, carrot in same pot to soften1/2 tsp smoked paprike
- Add vegetable broth & butternut squash
- season with salt and pepper to taste
- Add spices/herbs (garlic, paprika, turmeric, thyme)
- Bring soup to a boil, once boiling lower heat to medium and add Alphabet soup at very end as to not over cook
